The air fryer cod recipe is the one that finally made me relaxed about cooking fish. It’s because the circulating hot air cooks the fillets evenly, dries the surface just enough to give it a light bite, and leaves the inside moist and sweetly mild. I first used this method for cooking fish in 2024 when I wanted to make something quicker than oven-roasted cod but tidier than pan-fried fish. By 2025 I was using it for weeknight dinners on a regular basis. The simple seasoning of smoked paprika, garlic, lemon and a little parsley is perfect for cod, which is a very mild fish and doesn’t need too much to bring out its flavor.
Speed is the obvious reason to make this air fryer cod recipe. The basket is a cross between a small grill and an oven, so the cod fillets get a nice golden edge to them without the need for breadcrumbs or batter. This is a forgiving dish to make. There is no spattering of oil, no fishy smell left in the house for hours and very little to wash up afterwards. Cod is a lean, mild fish so is also great for children and adults alike.
The best cod for air frying is thick, center-cut fillets. Thinner tail pieces will overcook before the rest of the fish is ready. Tuck any narrow ends under the rest of the fillet to ensure even cooking. Fresh cod should smell clean and slightly salty, like the sea. You can also use frozen cod fillets for this recipe. Just make sure to completely thaw them in the refrigerator before using and dry them well so that they do not steam in the air fryer instead of roasting. My simple seasoning for this Air Fryer Cod consists of olive oil, smoked paprika, garlic powder, salt and pepper. Finish with lemon and parsley. The garlic powder works better than fresh garlic in this recipe, as the fresh garlic can scorch in the hot air of the air fryer. Other white fish such as haddock, pollock or hake can be used in place of cod if it is too expensive or out of season.
Dry the fillets well with kitchen paper. Press down on the surface of the fish so that it feels tacky rather than slick. This is crucial for the fish to brown well. Mix the oil with the spices and lemon zest to form a paste. Brush this all over the fish. The fillets will be a rusty color and will be covered in pepper. Place the fish in a single layer in the basket, with space between each fillet. If you crowd the fish, the fillets will not have enough space to crisp up. Nothing needs turning over during cooking. Once the air fryer has finished cooking, leave the fillets for a few minutes to firm up before serving. Finish with a squeeze of lemon juice and a sprinkle of chopped parsley.
Look for the color of the cod first. Raw cod is glassy and slightly translucent; as it cooks, it becomes opaque and turns a milky white color. Press down on the thickest part of the fish with a fork and it should part easily into large, moist flakes. If it feels rubbery and springy, then it needs a little longer; if it is chalky and dry then it has over-cooked. The raw fish will have a watery smell, which will change to a warm, sweet smell when it is cooked. A thermometer is the best way to test for doneness and the safe internal temperature for cod is on the recipe card.
Choose fillets of similar thickness. Cut any large pieces of fish into two pieces so that they cook at the same rate. Lightly oil the basket or use a perforated parchment liner to prevent fish from sticking to the basket.
No, but it is better to have one for thick fillets of cod. Do not wash raw fish under the tap as this can spread bacteria around the sink. Pat dry with kitchen paper and then wash your hands, the board and knife in hot soapy water. Do not poke at the fish as this lets hot air escape from the air fryer.
If the fish is dry, you have used thin fillets or your air fryer is running hot. Check the fish earlier next time and take it out as soon as it flakes. If the surface of the fish is pale and soft, the fish was wet when you put it in the air fryer. Dry the fish more thoroughly next time and leave more space between the fillets. The fish may stick to the basket of the air fryer. Oil the basket more before cooking next time, or use a perforated parchment liner. Dark, bitter spots can be caused by fresh garlic or by oil pooling in the bottom of the basket. If the middle of the fillet is still translucent while the outside is cooked, the fillet was too thick. Return to the air fryer and check again in a few minutes.
For a casual meal, the cod can be flaked into warm tortillas with shredded cabbage and avocado and served with tartar sauce or garlic yoghurt.
Cajun seasoning in place of the smoked paprika adds a bit of spice. For a herby version, use dried dill and a small amount of mustard in the oil. To create a crispier surface on the fish, you can dust with panko breadcrumbs. This will increase the calorie content of the recipe above the stated value. A small amount of miso can be whisked into the oil to add extra depth of flavor.
Cod is best served fresh but leftovers can be kept in the fridge for up to two days. Reheat until piping hot throughout. Reheat in the air fryer for the best results to re-crisp the surface of the fish. Do not reheat more than once.
No, as the salt will change the texture of the fish over time. Brush the paste on the cod just before cooking.
Yes. Place it skin side down on a lightly oiled basket; the skin protects the flesh, though many people leave it on the plate.
No. Because nothing is pan-fried, there is no spattering of oil and the fishy smell is contained in the air fryer. Wash the basket in hot soapy water as soon as you have finished cooking.
I would advise using perforated parchment rather than solid foil, as this will block the air flow and leave the fish pale underneath.
Both work well for this recipe. Try to look for fish with a recognized sustainability label on the packet, and choose the freshest possible.
Tartar sauce, garlic yoghurt or a simple lemon butter all suit the mild flavor of this fish.
I would not. Salt changes the texture over time, so brush the paste on just before cooking.
I used to overcook fish out of nerves, but this air fryer cod recipe has cured me of that. Trust your eyes and a thermometer, and keep the seasoning simple the first time you make it. Once you have tried it, I would love a rating and a comment below, along with any changes you made.
Tender, flaky cod fillets seasoned with smoked paprika, garlic and fresh lemon, cooked in the air fryer for a lightly crisp surface and a moist centre. Simple pantry ingredients, no flipping and very little cleanup make this an easy, high-protein dinner for four.
